Fresh mozzarella, maybe. Or maybe farmer's cheese or ricotta. but the hoisin sauce is pretty adhesive.

Hmm, doesn't sound like a great match to me. A good one - duck can hold up with lots of things, but the Peking part doesn't seem like a good match. The whole point of that operation - getting a crispy skin - feels like it wouldn't be a good idea for a pizza topping.

But still - duck. Yumm.

I love the one at California Pizza Kitchen--hope yours is fabulous. Tonight is make your own pizza night around here, the dough is mixed and rising but alas there is no duck. Five kinds of cheese (two fat free), brocolli, peppers, snowpeas, onions, basil, fresh tomoato sauce, olives, korean bbq sauce, baby lettuce, myers lemons. Should make for some interesting combinations.
