Peking Duck pizza.

Sure, with plum sauce, sauteed bokchoy and scallions. No cheese. Thin crust, but not too crispy.

A little mozz for moisture and adhesion, doesn't impart too much flavor.

Fresh mozzarella, maybe. Or maybe farmer's cheese or ricotta. but the hoisin sauce is pretty adhesive.
