Feedback on the enchaud (rolled pork roast) is nicely positive. Two people aver "no such thing as too much garlic," and two others thought it had enough. One person suggested more thyme. I think it was a little dry, and if I don't spring for truffle oil next time I should at least substitute another oil instead of counting on the sausage fat to keep it moist.
