Guinea pig

I love being the guinea pig in the family.
jducoeur and I are trying to expand our meal repertoire while eating healthier. That means Hamburger Helper is Out. J has been experimenting with new dishes, most of which are in the "one unit of protein, one to three units of vegetables, one starch" which isn't a bad balance.
Saturday, thinking he might not be home from his mother's in time to cook dinner, I picked up a package of chicken breast tenders, some onions, and some asparagus. I figured I'd make a little chicken curry and serve it along with steamed asparagus and some basmati. Well, he got home in time to cook, and brought steak tips and an eggplant to grill.
Which left the chicken and asparagus for Sunday. J made rice with low sodium broth, minced and browned an onion and leftover chorizo sausage, chopped the asparagus, and mixed it all in a paella pan with some chili powder & misc., laid the cooked chicken on top, and baked it briefly. Yumm! And leftovers!
